Preparing the Beans

    Soak the Beans

    Rinse the dried pinto beans under cold water and remove any debris. In a large bowl, add the beans and cover with water. Let them soak overnight, or for at least 8 hours.

    Cook the Beans

    After soaking, drain the beans and transfer them to a large pot. Add 8 cups of fresh water, salt, smoked paprika, and black pepper. Bring to a boil over high heat, then reduce the heat to low and simmer for about 1 hour, or until the beans are tender.

Cooking with Bacon and Aromatics

    Cook the Bacon

    In a large skillet over medium heat, cook the smoked bacon until crispy, about 6-8 minutes. Remove the bacon from the skillet and place it on a paper towel-lined plate to drain excess fat. Leave about 1 tablespoon of bacon drippings in the skillet.

    Sauté the Aromatics

    In the same skillet with the reserved bacon drippings, add the chopped onion and cook for 3-4 minutes until softened. Add minced garlic and chopped bell pepper, and continue to sauté for another 2-3 minutes until fragrant.

    Once the beans are cooked, add the sautéed mixture of onion, garlic, and bell pepper to the beans. Crumble the cooked bacon into the pot. Pour in the chicken broth, brown sugar, and apple cider vinegar. Stir to combine all ingredients.

    Simmer the Mixture

    Bring the mixture to a gentle simmer over medium heat. Reduce heat to low, cover, and let it simmer for another 30-40 minutes, stirring occasionally, until the flavors meld together and the beans are thickened.
