Method
Preparing the Beans
- 1
Soak the Beans
Rinse the dried pinto beans under cold water and place them in a large bowl. Cover the beans with enough water to submerge them by at least 2 inches. Let the beans soak for at least 8 hours or overnight.
- 2
Cook the Beans
Drain and rinse the soaked beans. In a large pot, combine the beans with 4 cups of fresh water and 1 tsp of salt. Bring to a boil over high heat, then reduce to a simmer. Cover and cook for about 1.5 to 2 hours, or until the beans are tender.
Cooking the Flavorings
- 3
Sauté the Vegetables
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and bell pepper, cooking until soft and translucent, about 5-7 minutes. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
- 4
Add the Spices
Sprinkle in the cumin, chili powder, black pepper, and smoked paprika. Stir well to combine and let the spices toast for about 1 minute.
