Method

Filling Preparation

  1. 1

    Make the Filling

In a mixing bowl, combine the sharp cheddar cheese, cream cheese, chopped pimentos, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Mix until well combined and smooth. Set aside.

Ravioli Dough Preparation

  1. 2

    Prepare the Dough

On a clean surface or in a large bowl, mix the all-purpose flour and salt. Make a well in the center and crack the eggs into the well. Using a fork, gradually mix the flour into the eggs until a dough forms. Knead the dough for about 5-7 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for 30 minutes.

Assembly and Cooking

  1. 3

    Roll Out the Dough

After the dough has rested, divide it into quarters. Roll out one quarter at a time on a floured surface until thin (about 1/16 inch thick).

  2. 4

    Fill the Ravioli

Using a teaspoon, place small mounds of the pimento cheese filling about 1 inch apart on one sheet of rolled dough. Moisten the edges around the filling with water. Place another sheet of dough on top and press down around each mound to seal.

  3. 5

    Cut the Ravioli

Using a ravioli cutter or a sharp knife, cut the ravioli into squares or desired shapes. Make sure the edges are well sealed.

  4. 6

    Cook the Ravioli

In a large pot, bring salted water to a boil. Cook the ravioli in batches for about 3-4 minutes or until they float to the surface. Remove with a slotted spoon and drain.

  5. 7

    Sauté the Ravioli

In a large skillet, heat the olive oil and butter over medium heat. Add the cooked ravioli and sauté for 2-3 minutes until golden and crispy on both sides.
