Method
Preparation
- 1
Prepare the Jalapeños
Wash the jalapeño peppers thoroughly. Slice them in half lengthwise, and remove the seeds and membranes for less heat, or leave them in for more spice.
- 2
Prepare the Cheese
Grate the sharp cheddar cheese using a cheese grater, set aside.
Cooking
- 3
Heat the Pan
In a large skillet, heat the butter and olive oil over medium heat until melted and bubbling.
- 4
Fry the Bologna
Add the bologna slices to the skillet and fry until they are golden brown on both sides, about 2-3 minutes per side.
- 5
Add the Jalapeños
Once the bologna is browned, add the halved jalapeños to the skillet, cut side down. Cook for 2-3 minutes until they start to soften.
- 6
Melt the Cheese
Sprinkle the grated cheddar cheese over the bologna slices and jalapeños. Cover the skillet with a lid and reduce the heat to low. Cook for an additional 2-3 minutes until the cheese is melted.
