Crust Preparation

    Make the Dough

    In a mixing bowl, combine all-purpose flour, granulated sugar, and salt. Add the chilled, cubed butter and mix until the mixture resembles coarse crumbs.

    Add Water

    Gradually add cold water, one tablespoon at a time, mixing until the dough comes together. Be careful not to overmix.

    Chill the Dough

    Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

Filling Preparation

    Mix the Filling

    In a mixing bowl, combine softened cream cheese, powdered sugar, vanilla extract, and lemon juice. Beat with an electric mixer on medium speed until smooth and creamy.

    Wash and slice the fresh fruit (if necessary) and set aside for topping the tarts.

Assembly and Baking
