Method
Crust Preparation
- 1
Make the Dough
In a mixing bowl, combine all-purpose flour, granulated sugar, and salt. Add the chilled, cubed butter and mix until the mixture resembles coarse crumbs.
- 2
Add Water
Gradually add cold water, one tablespoon at a time, mixing until the dough comes together. Be careful not to overmix.
- 3
Chill the Dough
Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
Filling Preparation
- 4
Mix the Filling
In a mixing bowl, combine softened cream cheese, powdered sugar, vanilla extract, and lemon juice. Beat with an electric mixer on medium speed until smooth and creamy.
- 5
Prepare the Fruit
Wash and slice the fresh fruit (if necessary) and set aside for topping the tarts.
Assembly and Baking
- 6
Preheat the Oven
Preheat your oven to 350°F (175°C).
- 7
Roll Out the Dough
After chilling, roll out the dough on a floured surface to about 1/8 inch thickness.
- 8
Cut and Shape the Tarts
Using a round cookie cutter or a glass, cut out circles of dough. Press each circle into a mini tart pan or muffin tin to form the crust.
- 9
Blind Bake the Crusts
Place the tart shells in the preheated oven and bake for about 10-12 minutes or until lightly golden. Remove from oven and let cool.
- 10
Fill the Tarts
Once the crusts are cooled, spoon the cream cheese filling into each shell, smoothing it out evenly.
- 11
Top with Fruit
Arrange the fresh fruit on top of the cream cheese filling.
- 12
Chill and Serve
Refrigerate the assembled tarts for at least 30 minutes before serving to set the filling. Enjoy your mini tarts!
