Prepare the Batter
In a large bowl, combine cornmeal, flour, baking powder, sugar, and salt. Mix well to combine all dry ingredients.

Add Wet Ingredients
In a separate bowl, whisk together the chopped onion, beaten egg, and buttermilk until well combined. Pour the wet mixture into the dry ingredients and stir until just combined. Do not overmix; the batter should be lumpy.

Heat the Oil
In a deep skillet or fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of batter into it; it should sizzle and float.

Fry the Hush Puppies
Using a spoon or small ice cream scoop, carefully drop spoonfuls of batter into the hot oil. Fry in batches to avoid overcrowding. Cook for about 3-4 minutes until golden brown, turning occasionally for even cooking.

Drain and Cool
Once cooked, remove hush puppies from the oil and drain on paper towels. Allow them to cool slightly before serving.
Maple Butter

Mix the Butter
In a small bowl, combine the softened unsalted butter and maple syrup. Use a fork or whisk to blend until the mixture is smooth and well incorporated.

Transfer the maple butter to a serving dish and serve alongside the warm hush puppies.
