Salad Preparation

  1. 1

    Prepare the Green Beans

Rinse the fresh green beans under cold water. Trim the ends and cut them into 2-inch pieces.

  2. 2

    Blanch the Green Beans

Bring a pot of salted water to a boil. Add the green beans and blanch them for 3-4 minutes until they are bright green and tender-crisp. Immediately transfer the beans to a bowl of ice water to stop the cooking process. Drain and set aside.

  3. 3

    Prepare the Tomatoes

While the beans are cooling, rinse the cherry tomatoes under cold water. Halve them and set aside.

  4. 4

    Slice the Onion

Peel and thinly slice the red onion. If desired, soak the slices in cold water for 10 minutes to reduce their sharpness, then drain.

  5. 5

    Chop the Basil

Rinse the fresh basil leaves under cold water, pat them dry, and then roughly chop.

Dressing Preparation

  1. 6

    Mix the Dressing

In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, Dijon mustard, salt, and black pepper until well combined.

Salad Assembly

  1. 7

    Combine Ingredients

In a large mixing bowl, combine the blanched green beans, halved cherry tomatoes, sliced red onion, and chopped basil.

  2. 8

    Add Dressing

Pour the dressing over the salad and toss gently to coat all the ingredients evenly.

  3. 9

    Serve

Transfer the salad to a serving platter or individual bowls. Enjoy immediately or let it chill in the refrigerator for 30 minutes to meld the flavors.
