    Soak the Chickpeas

    Place the dried chickpeas in a bowl and cover them with water. Soak for at least 8 hours or overnight. After soaking, drain and rinse the chickpeas.

    Blend the Ingredients

    In a food processor, combine the soaked chickpeas, chopped parsley, chopped cilantro, onion, garlic, cumin, coriander, baking powder, salt, and black pepper. Pulse until the mixture is well combined but still slightly coarse. Do not over-blend.

    Form the Falafel Balls

    Transfer the mixture to a bowl and add the flour. Mix well until fully incorporated. Using your hands, form small balls or patties (about 1.5 inches in diameter) and place them on a baking sheet.

    Heat the Oil

    In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small piece of the mixture into it; it should sizzle and float.

    Fry the Falafel

    Carefully add the falafel balls to the hot oil in batches, making sure not to overcrowd the pan. Fry each batch for about 4-5 minutes or until golden brown, turning occasionally to ensure even cooking.

    Drain and Serve

    Remove the fried falafel from the oil and place them on paper towels to drain any excess oil. Serve hot with tahini sauce, pita bread, and fresh vegetables.
