Shred the Cabbage
Remove the outer leaves of the green and red cabbage. Cut them in half and remove the core. Using a sharp knife or a food processor, shred the cabbage into thin strips. Place the shredded cabbage into a large mixing bowl.

Grate the Carrots
Peel the carrots and then use a box grater or food processor to grate them finely. Add the grated carrots to the bowl with the cabbage.

Chop the Green Onions
Clean the green onions and chop the green parts finely. Add them to the mixing bowl with cabbage and carrots.

Mix the Dressing Ingredients
In a separate bowl, combine the mayonnaise, apple cider vinegar, sugar, celery seed, salt, and black pepper. Whisk together until smooth and well combined.

Combine Vegetables and Dressing
Pour the dressing over the shredded vegetables in the mixing bowl. Toss everything together gently using salad tongs or two large spoons until all the vegetables are well coated with the dressing.

Chill and Serve
Cover the coleslaw and refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled as a side dish.
