Method

Preparation of Chicken Wings

    Clean the Wings

    Rinse the chicken wings under cold water and pat them dry with paper towels.

    Season the Wings

    In a large bowl, mix the salt and black pepper. Add the chicken wings and toss to ensure they are evenly coated.

Optional Dry Rub Application

    Prepare the Dry Rub

    In a small bowl, combine paprika, garlic powder, onion powder, brown sugar, and cayenne pepper. Mix well.

    Apply the Dry Rub

    Sprinkle the dry rub over the seasoned wings and toss until wings are well coated. Let them sit for at least 30 minutes.

Optional Sauce Preparation

    Make Sweet Trashed Sauce

    In a medium saucepan, combine honey, soy sauce, ketchup, minced garlic, and red chili flakes. Bring to a simmer over medium heat, then reduce the heat and let it cook for 10 minutes, stirring occasionally.

    Make Buffalo Trashed Sauce

    In another saucepan, melt the butter over medium heat. Add hot sauce and garlic powder, stirring until well combined. Remove from heat.

Smoking the Wings

    Prepare the Smoker

    Soak cherry wood chips in water for at least 30 minutes. Drain and place them in the smoker box.

    Smoke the Wings

    Preheat your smoker to 225°F (107°C). Place the seasoned wings on the smoker racks and smoke for about 1.5 to 2 hours, or until the internal temperature reaches 165°F (74°C).

Finishing Touches

    Coat with Sauce

    If using Sweet Trashed Sauce, brush the wings with the sauce during the last 15 minutes of smoking. If using Buffalo Trashed Sauce, toss the wings in the sauce after removing them from the smoker.

    Serve

    Remove the wings from the smoker, allow them to rest for 5 minutes, then serve hot with your choice of dipping sauce.
