Method

Making the Ravioli Dough

  1. 1

    Prepare the Dough

In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and crack in the eggs. Add water and mix with a fork until a rough dough forms.

  2. 2

    Knead the Dough

Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for 30 minutes.

Preparing the Filling

  1. 3

    Mix the Filling

In a mixing bowl, combine the smoked brisket, BBQ sauce, cream cheese, cheddar cheese, and black pepper. Mix until well combined.

Assembling the Ravioli

  1. 4

    Roll Out the Dough

After resting, roll out the dough on a floured surface until it's thin (about 1/8 inch thick).

  2. 5

    Cut and Fill the Ravioli

Cut the dough into squares (2x2 inches). Place a small spoonful of filling in the center of half of the squares. Brush the edges with water and top with another square. Press to seal.

Breading and Frying

  1. 6

    Prepare the Breading Station

Set up a breading station with one bowl for beaten egg and another for a mixture of breadcrumbs and Parmesan cheese.

  2. 7

    Bread the Ravioli

Dip each ravioli in the beaten egg, then coat in the breadcrumb mixture.

  3. 8

    Fry the Ravioli

Heat oil in a deep skillet over medium-high heat. Fry the ravioli in batches until golden brown, about 3-4 minutes per side. Drain on paper towels.

Serving

  1. 9

    Plate the Ravioli

Serve the fried ravioli hot, drizzled with extra BBQ sauce and garnished with chopped parsley.
