Chicken Preparation

Marinate the Chicken
In a bowl, combine the olive oil, smoked paprika, garlic powder, salt, and black pepper. Add the chicken thighs, coating them well. Cover and marinate in the refrigerator for at least 30 minutes.

Make the Burnt End Mayo
In a bowl, mix together the mayonnaise, BBQ sauce, chopped smoked brisket ends, Worcestershire sauce, and garlic powder until well combined. Set aside.
Tobacco Onions Preparation

Soak the Onions
Place the sliced onions in a bowl and cover with buttermilk. Let them soak for at least 30 minutes.

Prepare the Breading
In a separate bowl, mix together the flour, cornstarch, salt, and black pepper.

Assemble the Sandwich
Toast the brioche buns on the grill until lightly browned. On the bottom half of each bun, place a lettuce leaf, some sliced grilled chicken, a generous dollop of burnt end mayo, and a handful of crispy tobacco onions. Top with pickles and close the sandwich with the top half of the bun.
