    Make the Burnt End Mayo

    In a medium bowl, combine mayonnaise, diced burnt ends, smoked paprika, garlic powder, onion powder, black pepper, salt, and lemon juice. Mix well until all ingredients are fully incorporated. Taste and adjust seasoning if necessary. Set aside.

Tobacco Onions

    Prepare the Tobacco Onions

    In a large bowl, combine flour, cornstarch, smoked paprika, salt, and black pepper. Mix well. Dip the sliced onions into the flour mixture, ensuring they are well-coated. Heat oil in a deep skillet or fryer over medium-high heat. Once the oil is hot, carefully add the coated onions in batches, frying until golden brown and crispy, about 3-4 minutes per batch. Remove with a slotted spoon and drain on paper towels. Keep warm.

Assemble the Sandwich

    Grill the Brioche Buns

    Preheat a grill or grill pan over medium heat. Slice the brioche buns in half and lightly butter the cut sides. Place them butter-side down on the grill and toast until golden brown, about 2-3 minutes.

    Spread a generous amount of burnt end mayo on the bottom half of each toasted brioche bun. Top with a heap of tobacco onions and place the top half of the bun on each sandwich. Serve immediately.
