Brisket Preparation

If not already done, smoke the brisket until tender, roughly 1.5 to 2 hours at 225°F.

Shred the Brisket
Once smoked, shred the brisket into bite-sized pieces and set aside.
Cheese Sauce Preparation

Melt the Cream Cheese
In a medium saucepan over low heat, add cream cheese and let it melt, stirring occasionally.

Add Milk and Cheeses
Gradually stir in the milk, sharp cheddar cheese, and Monterey Jack cheese until fully melted and combined.

Incorporate Spices
Add diced tomatoes with green chilies, chili powder, cumin, salt, and black pepper to the cheese mixture, stirring to combine.

Once the cheese sauce is smooth and creamy, fold in the shredded brisket and mix well.
