Method

Brisket Preparation

  1. 1

    Prepare the Brisket

If not already done, smoke the brisket until tender, roughly 1.5 to 2 hours at 225°F.

  2. 2

    Sauté the Onion and Garlic

In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic. Sauté until onion is translucent, about 5 minutes.

  3. 3

    Shred the Brisket

Once smoked, shred the brisket into bite-sized pieces and set aside.

Cheese Sauce Preparation

  1. 4

    Melt the Cream Cheese

In a medium saucepan over low heat, add cream cheese and let it melt, stirring occasionally.

  2. 5

    Add Milk and Cheeses

Gradually stir in the milk, sharp cheddar cheese, and Monterey Jack cheese until fully melted and combined.

  3. 6

    Incorporate Spices

Add diced tomatoes with green chilies, chili powder, cumin, salt, and black pepper to the cheese mixture, stirring to combine.

  4. 7

    Add the Brisket

Once the cheese sauce is smooth and creamy, fold in the shredded brisket and mix well.

Serving

  1. 8

    Serve the Queso

Pour the brisket queso into a serving dish and serve warm with tortilla chips for dipping.
