Method
Preparation
- 1
Prepare the Brisket
Start by trimming excess fat from the brisket to ensure even cooking and to avoid overly greasy burnt ends.
- 2
Make the Dry Rub
In a bowl, combine paprika, garlic powder, onion powder, black pepper, salt, and cayenne pepper. Mix well to create an even dry rub.
- 3
Apply the Dry Rub
Generously season the brisket with the dry rub mixture, ensuring all sides are coated. Let it sit for at least 30 minutes to absorb the flavors.
Smoking the Brisket
Creating Burnt Ends
- 6
Cut the Brisket
Once the brisket is cooked, remove it from the smoker and let it rest for about 30 minutes. Cut it into 1-inch cubes.
- 7
Coat with Sauce
In a large bowl, mix the cubed brisket with BBQ sauce, honey, and brown sugar until all pieces are well coated.
- 8
Return to Smoker
Return the coated brisket cubes to the smoker for an additional 1-2 hours at 250°F (121°C) to caramelize the sauce and enhance the flavor.
