    In a large, heavy-bottomed pot or deep fryer, pour in the rendered beef fat and heat it over medium-high heat until it reaches 350°F (175°C). Use a thermometer to ensure accurate temperature.

    After soaking, drain the potatoes and pat them dry with paper towels. Make sure they are as dry as possible to avoid splattering when frying.
