Cut each corn tortilla into 6 wedges to create chips.

In a large pot or deep fryer, heat vegetable oil over medium heat until it reaches 350°F (175°C).

Carefully add tortilla wedges to the hot oil in batches to avoid overcrowding. Fry until golden brown and crispy, about 2-3 minutes. Remove with a slotted spoon and drain on paper towels.
Assemble Nachos

On a large platter or baking sheet, spread a layer of the fried tortilla chips.

Evenly distribute shredded chicken, shredded beef, jalapeños, and shredded cheese over the chips.

Generously drizzle BBQ sauce over the entire dish, making sure to cover all areas.
