Method
Cooking Grits

Prepare the Water
In a medium pot, bring 2 cups of water to a boil.

Add Grits
Once the water is boiling, slowly whisk in 6 oz of local grits to prevent lumps.

Cook Grits
Reduce heat to low and cover. Cook for about 20-25 minutes, stirring occasionally until the grits are creamy and tender. Add salt to taste.
Making Spicy Cabbage Demi

Sauté Cabbage
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 2 cups of sliced cabbage and sauté for about 5 minutes until it begins to soften.

Add Garlic and Spices
Add 2 tablespoons of minced garlic and 1 teaspoon of red pepper flakes to the cabbage. Sauté for another 2-3 minutes until fragrant.

Finish the Demi
Stir in 2 tablespoons of apple cider vinegar, and season with salt and black pepper to taste. Cook for an additional 2 minutes until everything is well combined.
Grilling

Prepare the Grill
Preheat your grill to medium-high heat.

Grill Grits
Once the grits are cooked, spread them onto a grill-safe tray or a piece of aluminum foil, shaping them into a patty. Place on the grill for about 3-4 minutes on each side until they develop a nice char.

Serve the grilled grits topped with the spicy cabbage demi.
