Gin Preparation

    Prepare the Botanicals

    In a small bowl, combine the juniper berries, coriander seeds, angelica root, orris root, cinnamon stick, cardamom pods, lemon peel, and orange peel. Crush the mixture slightly using a mortar and pestle to release the essential oils.

    Place the crushed botanical mixture into a large pot and add 500 ml of water. Bring the mixture to a gentle simmer over medium heat, allowing the flavors to infuse for about 30 minutes.

    After simmering, remove the pot from heat and strain the mixture through a fine mesh strainer or cheesecloth into a clean container, discarding the solid botanicals.
