Prepare the Dry Ingredients
In a large mixing bowl, combine the rolled oats, all-purpose flour, baking powder, and salt. Whisk together until evenly mixed.

Combine Ingredients
Pour the wet ingredients into the dry ingredients. Stir gently until just combined. Be careful not to overmix; a few lumps are okay.

Heat the Pan
Heat a non-stick skillet or griddle over medium heat. Lightly grease it with cooking spray or a little oil.

Cook the Pancakes
Pour about 1/4 cup of the pancake batter onto the skillet for each pancake. Cook for 2-3 minutes or until bubbles form on the surface and the edges look set. Flip and cook for another 2-3 minutes until golden brown.

Serve pancakes warm, topped with sliced banana, candied pecans, a drizzle of maple syrup, and fresh fruit.
