Cook the Bacon
In a large skillet over medium heat, add the applewood smoked bacon slices. Cook for about 4-5 minutes on one side until crispy, then flip and cook for another 2-3 minutes. Remove the bacon from the skillet and let it drain on a paper towel.

Fry the Eggs
In the same skillet with the bacon drippings, crack the large eggs gently. Fry them to your desired doneness, about 2-3 minutes for sunny side up. Season with salt and black pepper to taste.
Assembling the Sandwich

Toast the Bread
While the eggs are frying, toast the sourdough bread slices until golden brown.

Spread the Mayonnaise
Once toasted, spread 1 tablespoon of mayonnaise onto one side of each slice of sourdough bread.

Complete the Sandwich
Place the other slice of sourdough on top, mayonnaise side down. Press gently to hold everything together.
