1. Prepare the Shrimp
In a large pot, bring the water to a boil. Add the salt and the juice of half the lemon. Once boiling, add the shrimp and cook for 2-3 minutes or until they turn pink and opaque. Remove from heat.
2. Chill the Shrimp
Drain the shrimp and transfer them to a bowl of ice water to stop the cooking process. Let them cool for about 5 minutes. Once cooled, drain again and pat dry with paper towels.
3. Serve
Arrange the chilled shrimp on a platter. Serve with pico de gallo and cocktail sauce on the side. Garnish with lemon wedges, if desired.
