    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into thin strips, about 1/4 inch thick. Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch.

    Dry the Potatoes

    After soaking, drain the potatoes and pat them dry with paper towels to remove moisture.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Fry the potatoes in batches, making sure not to overcrowd the pot. Cook for about 4-5 minutes until golden and crispy. Remove and drain on paper towels.

    Season the Fries

    While the fries are still hot, drizzle with truffle oil, then sprinkle with grated Parmesan cheese, chopped parsley, chopped thyme, salt, and black pepper. Toss to combine.

Roasted Garlic Aioli

    Roast the Garlic

    Preheat the oven to 400°F (200°C). Wrap the garlic cloves in aluminum foil with a drizzle of olive oil. Roast in the oven for about 30-35 minutes until soft and caramelized.

    Prepare the Aioli

    Once the garlic is roasted, let it cool slightly. Squeeze the garlic out of the skins into a bowl. Add mayonnaise, lemon juice, salt, and black pepper. Mix until smooth and creamy.

    Serve

    Transfer the aioli to a serving bowl and serve alongside the truffle pommes frites.
