Beef Medallions

Prepare the Beef
Trim the beef tenderloin of any excess fat and cut it into 1-inch thick medallions. Season both sides with salt and black pepper.

Slice the Onions
Peel and thinly slice the yellow onions.

Caramelize the Onions
In the same skillet used for the beef, add butter over medium heat. Once melted, add the sliced onions and brown sugar. Cook, stirring occasionally, for about 15-20 minutes until golden brown. Add balsamic vinegar and cook for an additional 2-3 minutes, then remove from heat.
Basil Pesto Aioli

Prepare the Aioli
In a small bowl, combine mayonnaise, basil pesto, minced garlic, and lemon juice. Mix well until smooth and creamy. Set aside.
Assembling the Sliders

Toast the Buns
Lightly toast the mini brioche buns in a toaster or on a pan until golden brown.

Assemble the Sliders
Spread a generous amount of basil pesto aioli on the bottom half of each toasted bun. Layer with arugula, a beef medallion, caramelized onions, and roasted red peppers. Top with the other half of the bun.
