Braise the Beef
Return the beef to the pot, add beef broth, cumin, and smoked paprika. Bring to a simmer, then cover and reduce heat to low. Cook for 2.5 to 3 hours or until the beef is fork-tender. Remove the beef from the pot and shred it with two forks.
Cilantro Rice

Cook the Rice
In a medium saucepan, combine white rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes or until the rice is cooked.

In a bowl, combine diced tomatoes, red onion, minced jalapeño, chopped cilantro, lime juice, and salt. Mix well and let sit for at least 10 minutes to allow the flavors to meld.
Black Bean Relish

In a bowl, mix the drained black beans, diced red bell pepper, diced red onion, chopped cilantro, lime juice, and salt. Stir to combine and let sit for 10 minutes.
Fire Roasted Corn

In a bowl, mix the canned fire roasted corn with lime juice and salt to taste. Set aside.
Garbanzo Beans

Season Beans
In a bowl, toss the drained garbanzo beans with olive oil, cumin powder, paprika, and salt. Let sit for 10 minutes to absorb flavors.
Chipotle Aioli

Combine Ingredients
In a bowl, whisk together mayonnaise, minced chipotle peppers, lime juice, garlic powder, and salt until smooth. Adjust seasoning to taste.
Avocado

Slice the ripe avocados in half, remove the pit, and scoop out the flesh. Drizzle with lime juice and sprinkle with salt.
