Short Rib Filling

    Braise the Short Ribs

    In a large pot, heat olive oil over medium heat. Season the short ribs with salt and black pepper. Sear the ribs on all sides until browned, about 3-4 minutes per side. Remove the ribs and set aside.

    Sauté Aromatics

    In the same pot, add the chopped onion and minced garlic. Sauté until the onion is translucent, about 5 minutes.

    Braise

    Return the short ribs to the pot, add the beef broth and fresh thyme. Bring to a simmer, cover, and reduce heat to low. Cook for 2-3 hours until the meat is tender and falling off the bone.

    Shred and Cool

    Remove the short ribs from the pot, shred the meat, and let it cool. Reserve some of the braising liquid.

Potato Mixture

    Cook Potatoes

    In a large pot, boil the peeled and cubed potatoes in salted water until fork-tender, about 15-20 minutes. Drain and return to the pot.

    Mash and Mix

    Mash the potatoes until smooth. Stir in the shredded gouda and mozzarella cheeses, chopped chives, and salt. Add the shredded short rib meat and mix until well combined.

    Form Croquettes

    Allow the mixture to cool slightly, then form small oval shapes (croquettes) with your hands. Dip each croquette in beaten eggs, then coat with flour, and finally roll in breadcrumbs.

Espelette Aioli

    Prepare Aioli

    In a small bowl, combine mayonnaise, minced garlic, espelette pepper, and lemon juice. Stir until well mixed and season to taste.

Fry Croquettes

    Heat Oil

    In a deep frying pan, heat vegetable oil over medium-high heat.

    Fry Croquettes

    Fry the croquettes in batches until golden brown on all sides, about 3-4 minutes per side. Drain on paper towels.
