Braise
Return the short ribs to the pot, add the beef broth and fresh thyme. Bring to a simmer, cover, and reduce heat to low. Cook for 2-3 hours until the meat is tender and falling off the bone.

Shred and Cool
Remove the short ribs from the pot, shred the meat, and let it cool. Reserve some of the braising liquid.

Form Croquettes
Allow the mixture to cool slightly, then form small oval shapes (croquettes) with your hands. Dip each croquette in beaten eggs, then coat with flour, and finally roll in breadcrumbs.
Espelette Aioli

Prepare Aioli
In a small bowl, combine mayonnaise, minced garlic, espelette pepper, and lemon juice. Stir until well mixed and season to taste.
Fry Croquettes

Heat Oil
In a deep frying pan, heat vegetable oil over medium-high heat.

Fry Croquettes
Fry the croquettes in batches until golden brown on all sides, about 3-4 minutes per side. Drain on paper towels.
