Method

Pork Belly Preparation

    Prepare the Marinade

    In a blender, combine black garlic, soy sauce, brown sugar, rice vinegar, salt, and black pepper. Blend until smooth.

    Marinate the Pork Belly

    Place the pork belly in a large resealable bag and pour the marinade over it. Seal the bag and refrigerate for at least 4 hours, preferably overnight.

    Cook the Pork Belly

    Preheat the oven to 300°F (150°C). Remove pork belly from the marinade and place it on a baking sheet lined with foil. Roast for about 2.5 to 3 hours until tender. Increase temperature to 450°F (230°C) for the last 20 minutes to crisp the skin.

    Glaze the Pork Belly

    Baste the pork belly with the leftover marinade in the last 10 minutes of roasting.

Cucumber Salad Preparation

    Slice the Cucumber

    Thinly slice the cucumber using a mandoline or sharp knife.

    Make the Dressing

    In a mixing bowl, combine rice vinegar, sugar, salt, and sesame oil. Whisk until sugar and salt are dissolved.

    Combine and Chill

    Toss the cucumber slices in the dressing and refrigerate for at least 30 minutes before serving.

Jalapeno Honey Aioli Preparation

    Mix Ingredients

    In a bowl, combine mayonnaise, finely chopped jalapeno, honey, minced garlic, and lemon juice. Mix well until smooth.

    Chill Aioli

    Refrigerate for 30 minutes to allow flavors to meld.

Assembly

    Prepare the Buns

    Slice the mini brioche buns in half and lightly toast them if desired.

    Assemble the Sliders

    Place a slice of roasted pork belly on the bottom half of each bun. Top with cucumber salad, a dollop of jalapeno honey aioli, pickled Fresno chilis, and a sprinkle of chopped cilantro. Cap with the top half of the bun.

    Serve immediately and enjoy your delicious pork belly sliders!
