Lobster Bisque Base

Add garlic and tomato paste
Stir in the minced garlic and tomato paste, cooking for an additional 2 minutes until fragrant.

Add stock and seasonings
Pour in the fish stock, then add the chopped lobster meat, salt, and black pepper. Bring the mixture to a simmer and cook for 15-20 minutes.

Blend the bisque
Using an immersion blender or a regular blender, puree the bisque until smooth. Return to the pot and stir in the heavy cream. Simmer for another 5 minutes.
Tarragon Oil

Make the tarragon oil
In a small saucepan, combine the olive oil and fresh tarragon leaves. Heat over low heat for about 10-15 minutes, allowing the oil to infuse. Remove from heat and strain the oil into a clean jar.
Bacon Snow

Create bacon snow
Cook the bacon slices in a skillet over medium heat until crispy. Remove and drain on paper towels. Once cooled, crumble the bacon into small pieces and mix with cornstarch in a food processor until fine and powdery.
