    Prepare the Potatoes

    Peel and dice the potatoes into small cubes. Place them in a pot of salted water, bring to a boil, and cook until tender, about 15 minutes. Drain and let cool slightly.

    Chop the Jalapenos

    Remove the stems and seeds from the jalapenos (for less heat, remove more seeds), then finely chop them.

    Preheat your oven to 375°F (190°C). Grease a 9-inch round cake pan with olive oil or line it with parchment paper.

Mixing

    Combine Ingredients

    In a large mixing bowl, mash the cooked potatoes using a potato masher. Add the chopped jalapenos, flour, eggs, cheddar cheese, baking powder, salt, and black pepper. Mix until well combined.
