Prepare the Beef Patties
In a mixing bowl, combine the ground prime beef with kosher salt and black pepper. Mix gently until just combined.

Shape the Patties
Form the beef mixture into 12 equal slider patties, making a slight indentation in the center of each.

Prepare the Buns
Toast the brioche slider buns on the grill or in a toaster until golden brown.
Roasted Garlic Aioli

Roast the Garlic
Preheat the oven to 400°F (200°C). Wrap the garlic cloves in aluminum foil with a drizzle of olive oil and roast for 30-35 minutes until soft and golden.

Make the Aioli
In a blender or food processor, combine the roasted garlic (squeezed from their skins), mayonnaise, lemon juice, olive oil, and salt. Blend until smooth and creamy. Adjust seasoning to taste.

Prepare the Onions
Thinly slice the red onions.

Finish the Marmalade
Stir in the balsamic vinegar and simmer for another 5 minutes. Remove from heat and let cool.
