    Prepare the Beef Patties

    In a mixing bowl, combine the ground prime beef with kosher salt and black pepper. Mix gently until just combined.

    Shape the Patties

    Form the beef mixture into 12 equal slider patties, making a slight indentation in the center of each.

    Cook the Patties

    Preheat a grill or skillet over medium-high heat. Cook the patties for about 3-4 minutes on each side, until they reach your desired doneness. Place a slice of Gruyère cheese on each patty during the last minute of cooking to melt.

    Prepare the Buns

    Toast the brioche slider buns on the grill or in a toaster until golden brown.

Roasted Garlic Aioli

    Roast the Garlic

    Preheat the oven to 400°F (200°C). Wrap the garlic cloves in aluminum foil with a drizzle of olive oil and roast for 30-35 minutes until soft and golden.

    Make the Aioli

    In a blender or food processor, combine the roasted garlic (squeezed from their skins), mayonnaise, lemon juice, olive oil, and salt. Blend until smooth and creamy. Adjust seasoning to taste.

Red Wine Onion Marmalade

    Prepare the Onions

    Thinly slice the red onions.

    Caramelize the Onions

    In a saucepan, heat olive oil over medium heat. Add the sliced onions and cook for about 10-15 minutes, stirring occasionally until they are soft and caramelized.

    Add Wine and Sugar

    Pour in the red wine and add the sugar. Stir well and simmer for about 20 minutes until the mixture thickens.

    Finish the Marmalade

    Stir in the balsamic vinegar and simmer for another 5 minutes. Remove from heat and let cool.
