Prepare the Filling
Remove the yolks from the egg whites and place them in a bowl. Mash the yolks with mayonnaise, Dijon mustard, salt, and black pepper until smooth.

Fill the Egg Whites
Using a spoon or piping bag, fill the egg whites with the yolk mixture. Set aside.

Prepare the Shrimp
In a bowl, season the shrimp with salt and black pepper. Set aside.

Dredge the Shrimp
In three separate bowls, place the flour, beaten egg, and panko breadcrumbs. Dip each shrimp first into the flour, then into the egg, and finally coat with panko breadcrumbs.

Fry the Shrimp
In a deep skillet, heat oil over medium-high heat. Fry the shrimp in batches until golden brown and crispy, about 2-3 minutes per side. Drain on paper towels.

Make the Jam
In the same skillet, add cherry tomatoes, brown sugar, smoked paprika, and apple cider vinegar. Cook until the tomatoes break down and the mixture thickens, about 10 minutes. Stir in the cooked bacon.
Pickled Fresno Chilis

Prepare the Brine
In a small saucepan, combine white vinegar, water, sugar, and salt. Bring to a boil, then remove from heat.

Pickle the Chilis
Place sliced Fresno chilis in a jar and pour the hot brine over them. Let sit for at least 30 minutes before using.
Spicy Sauce

In a small bowl, combine hot sauce, mayonnaise, and lime juice. Mix until smooth.
