Method

Brussels Sprouts Preparation

  1. 1

    Prepare the Brussels Sprouts

Preheat your oven to 400°F (200°C). Trim the ends of the Brussels sprouts and remove any yellow or damaged leaves. Cut them in half.

  2. 2

    Season the Brussels Sprouts

In a large bowl, toss the halved Brussels sprouts with olive oil, salt, and black pepper until they are evenly coated.

  3. 3

    Bake the Brussels Sprouts

Spread the Brussels sprouts on a baking sheet in a single layer. Bake for about 25-30 minutes, or until they are crispy and golden brown, tossing halfway through for even cooking.

Baked Apples Preparation

  1. 4

    Prepare the Apples

While the Brussels sprouts are baking, wash and core the apples. Cut them into wedges or slices.

  2. 5

    Season and Bake the Apples

In a bowl, mix the apple slices with sugar and cinnamon. Place them in a baking dish, dot with butter, and bake in the oven for 20-25 minutes, or until tender.

Peanut Miso Dressing Preparation

  1. 6

    Mix the Dressing

In a bowl, combine peanut butter, white miso paste, rice vinegar, soy sauce, and water. Whisk together until smooth and creamy.

Burnt Honey Cashew Preparation

  1. 7

    Prepare the Cashews

In a small saucepan over medium heat, combine raw cashews and honey. Cook, stirring constantly, until the honey begins to bubble and caramelize, about 5-7 minutes. Be careful not to burn.

  2. 8

    Season the Cashews

Remove from heat and sprinkle with salt. Spread the cashews on a parchment-lined baking sheet to cool.

Plating

  1. 9

    Assemble the Dish

Once everything is cooked, place the crispy Brussels sprouts on a serving platter. Drizzle with peanut miso dressing, top with baked apples, and sprinkle with burnt honey cashews. Finish with grated pecorino cheese and a sprinkle of Espelette pepper.
