Prepare the Broccolini
Rinse the broccolini under cold water to remove any dirt or debris. Trim the ends of the stems to about 1 inch.

Make Garlic Chips
Thinly slice the garlic cloves. Heat the olive oil in a small pan over medium heat. Once hot, add the garlic slices and fry until golden brown and crispy, about 2-3 minutes. Remove with a slotted spoon and drain on paper towels.

Char the Broccolini
Heat a grill or grill pan over high heat. Add the prepared broccolini and grill for about 4-5 minutes, turning occasionally, until charred and tender.

Season and Serve
Once charred, remove the broccolini from the grill. Drizzle with sherry vinegar, sprinkle with red chili flakes, and season with salt and black pepper to taste. Top with garlic chips and grated parmesan cheese before serving.
