Braised Short Rib

Bloomsdale Creamy Spinach

Horseradish Crumble

Method

Braised Short Rib

  1. 1

    Season the Ribs

Pat the beef short ribs dry with paper towels. Season generously with salt and black pepper on all sides.

  2. 2

    Sear the Ribs

In a large Dutch oven, heat olive oil over medium-high heat. Add the short ribs in batches and sear until browned on all sides, about 3-4 minutes per side. Remove and set aside.

  3. 3

    Sauté Vegetables

In the same pot, add onion, carrot, and celery. Sauté until softened, about 5 minutes. Add minced garlic and cook for another minute.

  4. 4

    Deglaze and Add Liquid

Pour in the red wine to deglaze the pot, scraping up any browned bits. Then add the beef broth, thyme, and bay leaves. Bring to a simmer.

  5. 5

    Braise the Ribs

Return the short ribs to the pot. Cover and cook on low heat for 3 hours, or until the meat is tender and falling off the bone.

  6. 6

    Rest and Prepare Sauce

Once done, remove the ribs and let them rest. Skim any excess fat from the surface of the sauce and reduce it slightly if needed.

Jalapeno Potato Cake

  1. 7

    Boil the Potatoes

In a large pot, boil the cubed potatoes until fork-tender, about 15-20 minutes. Drain and let cool slightly.

  2. 8

    Mix Ingredients

In a large bowl, mash the potatoes. Add minced jalapeno, beaten egg, flour, salt, black pepper, melted butter, and sliced green onions. Mix until well combined.

  3. 9

    Cook the Cakes

Heat a non-stick skillet over medium heat. Shape the potato mixture into patties and cook until golden brown on both sides, about 3-4 minutes per side.

Bloomsdale Creamy Spinach

  1. 10

    Sauté Spinach

In a large skillet, sauté the fresh spinach until wilted, about 3-4 minutes. Remove from heat and let cool slightly.

  2. 11

    Prepare Creamy Mixture

In a bowl, combine cream cheese, sour cream, minced garlic, salt, black pepper, and grated Parmesan cheese. Mix until smooth.

  3. 12

    Combine Spinach and Cream

Add the wilted spinach to the creamy mixture and stir until well coated.

Horseradish Crumble

  1. 13

    Prepare the Crumble

In a bowl, mix prepared horseradish, bread crumbs, melted butter, and chopped parsley until fully combined.

  2. 14

    Bake the Crumble

Spread the mixture evenly on a baking sheet and bake at 350°F (175°C) for about 10-12 minutes, or until golden brown.
