Bison Filet

    Prepare the Bison Filet

    Season the bison filet with salt and black pepper on both sides.

    Sear the Bison Filet

    Heat olive oil in a skillet over medium-high heat. Sear the bison filet for about 3-4 minutes on each side for medium-rare. Remove from heat and let rest.

Butter-Poached Lobster Tail

    Prepare the Lobster

    In a saucepan, melt the unsalted butter over low heat. Add minced garlic cloves and lemon juice, stirring to combine.

    Cook the Lobster

    Add the lobster tail to the butter mixture and poach for about 6-8 minutes, or until the meat is opaque and cooked through. Remove from heat and set aside.

Pomme Purée

    Prepare the Potatoes

    Peel and chop the potatoes into small chunks. Boil in salted water until tender, about 15-20 minutes.

    Drain the potatoes and return to the pot. Add heavy cream, butter, and salt. Mash until smooth and creamy.

Bacon Herb Butter

    In a bowl, mix together the unsalted butter, crumbled bacon, fresh herbs, and garlic powder until well combined.

    Transfer the mixture onto parchment paper, roll into a log, and refrigerate until firm.

    Toss the asparagus and sliced carrots with olive oil and salt.
