Whiskey Glaze

Prepare the Whiskey Glaze
In a saucepan over medium heat, combine the whiskey, brown sugar, soy sauce, minced garlic, grated ginger, and black pepper. Bring to a simmer and cook for 10 minutes, stirring occasionally, until the mixture thickens. Remove from heat and set aside.

Pickle the Fresno Chilis
In a small saucepan, combine white vinegar, water, sugar, and salt. Bring to a boil, add the sliced Fresno chili peppers, and remove from heat. Allow to cool to room temperature, then transfer to a jar and refrigerate for at least 1 hour before serving.

Prepare the Onion Strings
Soak the thinly sliced onion in buttermilk for at least 30 minutes. In a separate bowl, mix together the flour, cornstarch, salt, and black pepper. Heat vegetable oil in a deep fryer or heavy pot to 375°F (190°C). Dredge the soaked onion slices in the flour mixture and fry in batches until golden brown and crispy, about 3-4 minutes. Drain on paper towels and set aside.

Assemble the Dish
Slice the rested ribeye steak and place it on a serving platter. Top with crispy onion strings and pickled Fresno chilis. Drizzle additional whiskey glaze over the top if desired. Serve immediately.
