Preparation and Cooking

    Prepare the Steak

    Remove the New York Strip steak from the refrigerator and let it sit at room temperature for about 30 minutes. This helps the steak cook more evenly.

    Rub the steak with olive oil, then season generously on both sides with kosher salt, black pepper, and garlic powder.

    Prepare the Grill

    Light the mesquite charcoal in a charcoal grill. Allow it to burn until the coals are covered with ash and glowing red, which usually takes about 20-30 minutes.

    Place the seasoned steak on the grill over direct heat. Cook for about 4-5 minutes on one side for medium-rare, then flip and cook for another 4-5 minutes on the other side.
