Prepare the Oysters

Shuck the Blue Point oysters and place them in a bowl. Make sure to reserve the oyster liquor.

Make the Breading Mixture

In a shallow dish, combine the all-purpose flour, cornmeal, salt, black pepper, and paprika. Mix well.

Prepare the Egg Wash

In another bowl, whisk together the eggs and milk until well combined.

Coat the Oysters

Dip each shucked oyster first into the egg wash and then into the breading mixture, ensuring they are fully coated.

Heat the Oil

In a large skillet or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Oysters

Carefully add the coated oysters to the hot oil, frying in batches if necessary. Cook for 2-3 minutes or until golden brown and crispy. Remove and drain on paper towels.

Serve

Serve the fried oysters hot with lemon wedges and hot sauce on the side.
