    Cook the Bacon

    In a large pot, cook the chopped bacon over medium heat until crispy. Remove the bacon and set aside, leaving the bacon drippings in the pot.

    Sauté Vegetables

    Add butter to the pot with the bacon drippings. Once melted, add the diced onion, celery, and potatoes. Sauté for about 5 minutes until the onions are translucent.

    Make the Roux

    Sprinkle the flour over the sautéed vegetables and stir to combine. Cook for another minute.

    Add Broth and Clams

    Slowly add the chicken broth while stirring. Add the chopped clams, thyme, bay leaf, salt, and pepper. Bring to a simmer.

    Add Cream

    Once the potatoes are tender, remove the bay leaf and stir in the heavy cream. Simmer for another 5 minutes.

    Serve

    Ladle the chowder into bowls, garnish with the reserved bacon, and serve hot.
