    Prepare the Grill

    Preheat your grill to high heat, ensuring that the mesquite charcoal is glowing and providing even heat.

    Season the Steak

    Pat the filet mignon dry with paper towels. Rub the olive oil over the steak and season both sides generously with kosher salt and black pepper.

    Grill the Steak

    Place the filet mignon on the grill. Sear each side for about 4-5 minutes for medium-rare, or until desired doneness. Use a meat thermometer to check the internal temperature (130°F for medium-rare).

    Add Butter and Herbs

    During the last minute of grilling, add a tablespoon of butter and a sprig of fresh rosemary on top of the steak to infuse flavor.

    Rest and Serve

    Remove the filet mignon from the grill and let it rest for 5 minutes before slicing. Serve with your choice of sides.
