    Prepare the Meat

    In a large bowl, combine the lamb cubes with salt, black pepper, curry powder, and turmeric powder. Toss to coat evenly and let marinate for at least 30 minutes.

    Sauté Vegetables

    In a large pot or Dutch oven, heat olive oil over medium heat. Add chopped onion, minced garlic, and grated ginger. Sauté until the onion is translucent.

    Cook the Lamb

    Add the marinated lamb to the pot and brown on all sides. This should take about 5-7 minutes.

    Add Vegetables

    Stir in the chopped bell pepper and sliced carrots. Cook for another 5 minutes.

    Simmer with Coconut Milk

    Pour in the coconut milk and bring to a simmer. Reduce heat to low, cover, and let it cook for 1 hour, stirring occasionally, until the lamb is tender.

    Finish and Serve

    Once cooked, stir in the crumbled goat cheese and chopped cilantro. Adjust seasoning with more salt and black pepper if needed. Serve hot with rice or bread.
