    Prepare the Tofu

    Press the firm tofu to remove excess moisture. Crumble the tofu into a bowl and mix with the vegan chorizo. Season with salt and pepper.

    Cook the Tofu Mixture

    Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the tofu and vegan chorizo mixture and cook for about 5-7 minutes, stirring occasionally until heated through and slightly crispy.

    Fry the Egg (or Vegan Substitute)

    In a separate pan, heat the remaining tablespoon of olive oil. Crack the egg into the pan and fry to your liking (sunny-side up, over-easy, etc.). For a vegan option, use a plant-based egg substitute and follow package instructions.

    Prepare the Pupusas

    If using store-bought pupusas, heat them according to package instructions. If making from scratch, prepare the dough and fill with cheese or beans before cooking on a hot griddle.

    Cook the Veggies

    In the same skillet used for the tofu, add the mixed vegetables and sauté for about 5 minutes until tender but still crisp.

    Prepare the Plantain

    Slice the ripe plantain and pan-fry in a bit of oil until golden brown on both sides, about 3-4 minutes per side.

    Assemble the Plate

    On a large plate, serve the cooked rice and beans side by side, add the tofu and chorizo mixture, pupusas, sautéed veggies, fried egg (or substitute), fried plantains, and sliced avocado. Season with salt and pepper to taste.
