    Prepare the Vegan Chorizo

    Heat a skillet over medium heat. Add the vegan chorizo and cook until browned, about 5-7 minutes.

    Cook the Egg

    In a separate pan, scramble or fry the eggs to your liking. Set aside.

    Melt the Queso Oaxaca

    In a small saucepan, gently heat the queso Oaxaca until it melts. Stir occasionally.

    Prepare the Pupusas

    Warm the pupusas in a skillet or on a griddle until heated through, about 2-3 minutes per side.

    Sauté the Veggies

    In the skillet used for the chorizo, add mixed veggies and sauté for about 5 minutes until soft.

    Fry the Plantain

    Slice the plantain and fry in a little oil until golden brown, about 3-4 minutes per side.

    Assemble the Plate

    On a large plate, layer the rice and beans, top with the chorizo, eggs, melted queso, sautéed veggies, sliced avocado, fried plantain, and finish with salsa.
