    Prepare the Grill

    Preheat your grill to a medium-high heat. If using a smoker, prepare it according to the manufacturer's instructions.

    Smoke the Tomatoes

    Place the Roma tomatoes and the whole jalapeño on the grill. Close the lid and smoke for about 20-25 minutes until they are charred and soft.

    Sauté the Onion

    While the tomatoes are smoking, heat olive oil in a skillet over medium heat. Add diced red onion and sauté until softened, about 5-7 minutes.

    Blend Ingredients

    Once the tomatoes and jalapeño are smoked, remove them from the grill. In a blender, combine smoked tomatoes, sautéed onions, cilantro, lime juice, smoked paprika, salt, and black pepper. Blend until you reach your desired consistency.

    Taste and Adjust

    Taste the salsa and adjust seasoning as needed, adding more salt, lime juice, or black pepper to your liking.

    Transfer the smoked salsa to a bowl and serve with tortilla chips or as a topping for your favorite dishes.
