    Prepare the Pork

    Preheat your oven to 300°F (150°C). In a small bowl, mix together salt, black pepper, garlic powder, onion powder, cumin, and chili powder. Rub the spice mixture all over the pork shoulder. Heat olive oil in a large oven-safe pot over medium-high heat, and sear the pork on all sides until browned.

    Roast the Pork

    Cover the pot with a lid or foil and transfer it to the preheated oven. Roast for about 6 hours, or until the pork is tender and easily shredded with a fork.

    Prepare the Rajas

    While the pork is roasting, prepare the rajas by sautéing the sliced red onion in a bit of olive oil until translucent. Add the diced pineapple and cook for an additional 5 minutes. Stir in the chopped cilantro and lime juice, then set aside.

    Serve

    Once the pork is done, remove it from the oven and let it rest for 15 minutes before shredding. Serve the shredded pork topped with the rajas and drizzled with chili sauce.
