Roasting the Garlic
Preheat the oven to 400°F (200°C). Peel the garlic cloves and place them in a small baking dish. Drizzle with olive oil and sprinkle with a pinch of salt. Cover with aluminum foil and roast in the oven for 30 minutes until soft and fragrant.

Preparing the Tomatoes
While the garlic is roasting, chop the tomatoes into small pieces. Place them in a mixing bowl and add the remaining olive oil, salt, and black pepper. Toss to combine.

Mixing the Ranchera
Once the garlic is roasted, allow it to cool slightly. Mash the garlic with a fork and add it to the tomatoes. Stir in the sesame seeds and chopped cilantro. Mix well.

Serving
Serve the ranchera at room temperature as a dip or topping for grilled meats or vegetables. Enjoy!
