    Prepare the Pork

    In a large pot, heat the vegetable oil over medium heat. Season the pork shoulder with salt, pepper, and curry powder. Sear the pork on all sides until browned.

    Cook the Pork

    Add enough water to cover the pork and bring to a boil. Reduce heat, cover, and simmer for about 2 hours, or until the pork is tender and easily shredded.

    Prepare the Rice and Beans

    While the pork is cooking, prepare the rice according to package instructions. In a separate pot, heat the black beans until warm. Season with salt and pepper.

    Fry the Plantains

    Peel and slice the plantains diagonally. In a skillet, heat oil over medium heat and fry the plantain slices until golden brown on both sides. Drain on paper towels.

    Make the Chimichurri

    In a food processor, combine cilantro, garlic, lime juice, salt, and pepper. Blend until smooth, adding olive oil as needed to reach desired consistency.

    Chop the tomato and onion. Mix them together in a bowl with salt, pepper, and additional lime juice to taste.

    Heat the pupusas according to package instructions or cook them on a skillet until golden and heated through.

    To serve, plate the shredded pork alongside rice and beans, fried plantains, pupusas, chimichurri, and salsa.
