Maduro Sweet Plantains, Yucca, and Guacamole

Preparation Steps

    Prepare the Yucca

    Peel the yucca and cut it into chunks. Boil in salted water for about 20-25 minutes or until tender. Drain and set aside.

    Cook the Plantains

    Peel the ripe plantains and slice them diagonally into 1-inch thick pieces. In a skillet, heat some oil over medium heat. Fry the plantain slices until golden brown on both sides, about 3-4 minutes per side. Remove and drain on paper towels.

    Make the Guacamole

    In a bowl, mash the ripe avocados. Add lime juice, minced garlic, chopped cilantro (if using), salt, and black pepper. Mix well until creamy.

    Prepare the Garlic Mojo

    In a small bowl, mix olive oil with minced garlic. Let it sit for a few minutes to infuse the flavors.

    Serve

    On a platter, arrange the fried plantains and boiled yucca. Serve with guacamole on the side and drizzle the garlic mojo over the top.
