Preparation Steps

    Prepare the Yucca

    Peel the yucca and cut it into chunks. Boil in salted water for about 20-25 minutes or until tender. Drain and set aside.

    Fry the Plantains

    Peel the ripe plantains and slice them diagonally into 1-inch thick pieces. Heat oil in a frying pan over medium heat and fry the plantain slices until golden brown on both sides, about 3-4 minutes per side. Remove and drain on paper towels.

    Make the Guacamole

    In a bowl, mash the avocados. Add minced garlic, lime juice, salt, cilantro, and pepper. Mix well until smooth and creamy.

    Prepare the Garlic Mojo

    In a small bowl, whisk together olive oil, minced garlic, lime juice, salt, and pepper. Adjust seasoning to taste.

    Serve

    Arrange the fried plantains and boiled yucca on a plate. Serve with guacamole and drizzle the garlic mojo over the top.
