Cooking Instructions

  1. 1

    Marinate the Chicken

Rub the jerk seasoning all over the chicken thighs. Let marinate for at least 30 minutes or overnight in the refrigerator for best flavor.

  2. 2

    Cook the Chicken

Preheat a grill or skillet over medium-high heat. Cook the marinated chicken thighs for about 6-8 minutes on each side, or until fully cooked and juices run clear. Remove from heat and let rest.

  3. 3

    Prepare the Vegetables

In a separate pan, sauté the chopped vegetables in a bit of oil until they are tender, about 5-7 minutes.

  4. 4

    Fry the Plantain

Slice the ripe plantain and fry in a separate pan until golden brown and caramelized, about 3-4 minutes per side.

  5. 5

    Assemble the Dish

On a plate, serve the grilled jerk chicken alongside the sautéed vegetables, cooked rice, black beans, sliced avocado, fried plantain, and a generous drizzle of chimichurri sauce and salsa.
